New Food Safety Standards from December 2023

Starting from December 8, 2023, new food safety standards will be implemented in Victoria, Australia, affecting most food businesses.

Food Standards Australia New Zealand (FSANZ) has introduced the Standard 3.2.2A Food Safety Management Tool, which mandates businesses involved in food preparation and service to follow updated training requirements. Under this standard, businesses need to implement 2 or 3 food safety management tools based on their food handling activities.

These tools include a

  1. food safety supervisor,
  2. food handler training, and
  3. substantiation of critical food safety controls.

There are two categories of businesses: Category 1, considered higher risk, must implement all three management tools, while Category 2 businesses are required to have a food safety supervisor and food handler training.
